Easy Easter cookies

These are really simple cookies to make with the kids over the Easter holidays. Chewy and a great way to keep the kids busy and use up some easter treats at the same time. You could substitute the mini eggs for chocolate chunks if you wanted
Ingredients:
- 125g butter
- 100g light brown sugar
- 60g white sugar
- 1 medium egg lightly beaten
- 150g plain flour
- pinch of sea salt
- 100g mini chocolate eggs of your choice (reserve 12 for the top if desired) roughly chopped
Method
- 1. Pre heat the oven to 180 c
- 2. Melt the butter over a medium heat
- 3. Place the sugars in a bowl and pour over melted butter and beat until pale
- 4. Add the lightly beaten egg and stir to combine
- 5. Add flour and salt and mix
- 6. Add in the chopped mini eggs (reserving 12 if you want to decorate the tops of the cookies) The mixture will be quite runny , you can pop it into the fridge for a minute or two to firm up if you like
- 7. Drop tablespoons of the mixture on to 2x lined cookie sheets and bake for 10-12 mins until lightly golden at the edges
- 8. Remove from the oven and place the reserved mini egg in the centre of the cookie
