Easy Easter cookies

These are really simple cookies to make with the kids over the Easter holidays. Chewy and a great way to keep the kids busy and use up some easter treats at the same time. You could substitute the mini eggs for chocolate chunks if you wanted

Ingredients:


  • 125g butter
  • 100g light brown sugar
  • 60g white sugar
  • 1 medium egg lightly beaten
  • 150g plain flour
  • pinch of sea salt
  • 100g mini chocolate eggs of your choice (reserve 12 for the top if desired) roughly chopped


Method


  1. 1. Pre heat the oven to 180 c
  2. 2. Melt the butter over a medium heat
  3. 3. Place the sugars in a bowl and pour over melted butter and beat until pale
  4. 4. Add the lightly beaten egg and stir to combine
  5. 5. Add flour and salt and mix
  6. 6. Add in the chopped mini eggs (reserving 12 if you want to decorate the tops of the cookies) The mixture will be quite runny , you can pop it into the fridge for a minute or two to firm up if you like
  7. 7. Drop tablespoons of the mixture on to 2x lined cookie sheets and bake for 10-12 mins until lightly golden at the edges
  8. 8. Remove from the oven and place the reserved mini egg in the centre of the cookie
