Roasted butternut squash
I love butternut squash but I hated battling with them raw which, frankly, was like trying to cut through granite, until I learned this top tip.
The next time you are roasting a chicken, or anything really, stick the butternut squash (whole) into the oven along with it. After 1 hour, you will have a perfectly roasted delicious squash which slices like butter. Simply cut in half, scoop out the seeds and discard, then scoop out the flesh and freeze until needed.
