Recipes for your christmas leftovers

What do you do with all those leftovers? How about the best sandwiches of the year?!

Sandwich combos:
Turkey with Considered mango & apricot chutney on toasted sourdough


Ingredients

  • 2 slices sourdough
  • 2 slices turkey breast
  • 1 tbsp mayonnaise
  • 1 tbsp Considered mango & apricot chutney
  • Salad leaves
  • Chopped scallions


  1. Toast two slices of sourdough. Combine mayo and chutney and spread on both slices of the sourdough. Add sliced turkey breast, salad leaves and chopped scallions.

Turkey and avocado with considered tomato, chilli & balsamic chutney on rye



Ingredients

  • 2 slices of good rye bread
  • 2 slices turkey breast
  • ½ avocado
  • 1 tbsp cider vinegar
  • 1 tbsp Considered tomato, chilli & balsamic chutney
  • Basil leaves
  • Sliced red onion


Thinly slice the red onion and leave to sit in a tbsp of cider vinegar for at least ½ hour (this takes some of the pungency away and makes them sweeter). Spread the chutney on the rye and place the sliced turkey breast. Top with thinly sliced avocado and the drained onion. Scatter a handful of basil leaves and add salt and pepper to taste.


Ham and gruyere toastie



Ingredients

  • 2 slices sourdough
  • 2 slices ham
  • Few slices gruyere (or your favourite cheese)
  • 1 tsp Considered wholegrain mustard with horseradish
  • Drizzle olive oil


Thinly spread the Mustard on the sourdough and place the ham and cheese. Drizzle each side of the sandwich with olive oil and grill on both sides until golden brown.
